dude I am not sure...applicantguide can give u better advise....you already have some research in psych....I am not saying that research position is bad, it actually sounds really good, specialty if they will be paying you....But since u don't have any USCE you should have one and actually deal with some patients...

if the fellowship position give you patient-related experience then take it and get LORs after few weeks of your start to send to eras.
