I cannot get the letter or any proof about the working history in my country. It's not easy to come back with long distance, to wait and pick up some stuffs like this. Do they ask anything to prove details of working history in CAF?

not really...you declared that you worked. thats it.

They ask for letters after you match and go through HR paperwork, but again that could depend on the program

Human resources. Innthe orientation period when you file all paperwork, blood test and so firth. You also have to file the employment document and this is where past employers come in play.
