I was told by one of my mentors to list my unpublished research as IN PROGRESS on my eras application. What do you guys think? I hope that is ok to do? Any input is greatly appreciated.

Thats fine, but eras shouldve already been submitted if you plan on doing this cycle. You're hurting yourself already if it isnt submitted yet.
