I'm lactose intolerant

take me for example. Lactose intolerance prevalence in Asian populations approaches 100% but I've only recently begun to experience the problem.

it's not unusual for lactose intolerance to develop late in life.

Nothin strange here. It can arise any time. Any stress can precipitate it, espechially infectionus GI diseases.
For example, my uncle got it about 45-50 years old after acute gastroenteritis. Smile
